Stuffed Eggplant Masala 

An Indian Spiced Dish

Ingredients: *

  • One medium-large Eggplant
  • Medium onion
  • 3 Scallions
  • 3 cloves Garlic, minced
  • 1 Tbsp minced/grated Fresh Ginger
  • about 4 Tbsp Olive Oil
  • 1 can Chickpeas
  • 2 handfuls Grape Tomatoes, halved or 1-1 1/2 chopped Whole Tomato
  • 1 c chopped Cilantro
  • 1 tsp Garam Masala
  • 1 tsp Curry Powder
  • 1/4 tsp Turmeric
  • pinch of Salt


1. Half the eggplant lengthwise and cube the inner meat. Use a small pearing knife and cut around the eggplant about 1/4″ from the edge. Then cut into cubes and carefully remove leaving enough “meat” around the edges and bottom to hold-up once stuffed and baked. Set aside cubes.

2. Preheat oven to 400 degrees. Drizzle olive oil on inner eggplant and season with salt and pepper. Place on baking sheet or in large Pyrex dish. While the oven is heating, prep the other ingredients.













3. Chop onion and scallions. Heat 1-2 Tbsp Olive Oil in large Frying pan or skillet. Saute onion and scallions about 5 minutes.







4. Add Ginger and Saute about 3 minutes more.


5. Add Garlic, saute until fragrant, about 1 minute.














6. Add cubed Eggplant and Spices: Garam Masala, Curry Powder, Turmeric, and Cilantro. Cook about 8 minutes.











7. While Eggplant is cooking chop tomatoes to size of your liking- these large grape tomatoes are cut into quarters.





8. Add tomatoes and chick peas to pan and cook another 3-5 minutes until eggplant is tender, but not mushy.







9. Spoon mixture into eggplant skins.







10. Add freshly grated parmesan or my fav- Locatelli Romano Cheese (optional).

11. Bake at 375 degrees Fahrenheit for about 15 minutes.






VOILA! Cheese is melty and flavors have combined.

Allow to cool for several minutes before serving. And be careful when transferring to plate because eggplant is now very soft and need a lot of support, so get out your big serving spoons or spatulas!
